If you can get close enough to the AC compressor to touch it, one of the freon lines will be hot to the touch (discharge or high-pressure side) and one will be cold (suction side.) With the engine running at about 1200-1500 rpm or so (not critical) and AC set to max, if you feel the suction line at the compressor, it should be very cold and condensing moisture (assuming you aren't in the desert with 10% humidity.)
This is of course not as scientific as putting gauges on the system but it is a good indicator of how well the refrigeration cycle is working. If the suction line doesn't feel very cold, then I would certainly have it checked out by a shop.
