On mine one end of the long gray water tank is located on the passenger side below the kitchen window. When the two storage bay doors are opened you can see a long black panel, maybe 10 or 12 inches tall with a lot of self tapping screws that spans part of the the two compartments. There is a very aggressive black adhesive sealant behind the edges of the panel. I had to use a 3 inch wide flat pry bar to get the panel out far enough to get a utility knife in far enough to cut the adhesive a little at a time.
As I recall the sensors were on the side of the tank a few inches in. They could be easily seen. Sounds like yours may be different.
You might want to take look at the back of the display/control board and see if everything is plugged in properly.
The three TrueLevel sensors on the side of each tank are active (integrated circuit) devices in series. As the liquid level rises and each sensor "closes" it causes a change in a voltage on the control board.
The control board uses LM339 Low Power Low Offset Voltage Quad Comparator ICs to sense the voltage change and activate the appropriate LED. The gray water LM339 might be bad but there are a number of fialure points on the board.
