Although this might be a hassle, it is well worth the trouble, use buckets full of water to get the exact amount held. It just takes time and you can also see exactly how well the true lies gauge system works.
I did this on our Journey and got it down real nice. I even went so far as to runt he water pump for what would be the average shower and that gives me real good info if for some reason I think the true lies gauges are off. Sometimes when traveling the gauges level will show quite high because something (even soap foam) got onto the inside of the tank and the gauges real incorrectly. I know the WInnie true lies system is outside the tank, doesn't make a difference, they still can read incorrectly and often do.
Anyway, by knowing exactly how much they hold you have good info and can always tell if something changes.
Even a brand new motorhome can have stuff in a holding tank that can mess with things. This way you'll know what really is and not what marketing says.
Do this with the black water too. We run laundry water into the black water tank when at long term or travel sites (not when dry camping) and that tank stays really clean- for a black water tank.
