Hi, I did the same thing, bought the MH with the small inverter. Then I bought an OEM 2000 watt inverter and installed it myself. The price of the inverter was +/- $1,500. I think Camping World wanted something like $350 to install.
What it buys is the ability to use everything except air conditioning while boondocked. That is until the batteries run down. Microwave takes about 1800 watts. Refer takes approx 375 watts. Coffee maker = 500 watts and toaster about 1,000 watts.
I would suggest a true sine wave inverter. Costs about $300-400 more.
