What is the best procedure for setting up the mirrors on my rig?

Your mirrors are the same as ours. I would first adjust the mirrors by tilting them and tightening the allen screw underneath the casing and THEN adjust the glass mirror portion to your liking.

The only way to do this is to get in and out of your drivers seat several times...

According to the "experts" take your fire extinguisher, hat coffee mug etc and place it on the ground beside your rig in line with the center of your rear main axel and center the wide angle mirror where the base of the extinguisher etc meets the ground. Then tilt the mirror away from the veicle until about a 1 inch strip of the mirror has the sidewall of your coach visible in it. For the flat mirror adjust it until you have slighltly overlapped the top part of the view in the wide angle mirror and set it so you can see a 1 inch wide strip of your side wall in it.

In the wide angle mirror you will now be able to discern where your rear wheels are as they will be lined up with whatever is along the centerline going across the mirror. You can optionally put a pinstripe indicating the horizontal centerline of the mirror.
