I would recommend running new RG-6 coax which is supplied (depending on model) with your Winegard roof dish directly to your receiver. Do not try to find the old coax. It's probably the wrong type.
Not a hard problem. Mount the dish as forward as possible on the coach. There is a wood ceiling batton inside. Take it down, and you should be able to access the front cap of the coach from there. Run the new coax across the roof to a point where you can access it from the roof by pulling down on the front roof panel. At best you will only run 2-3 feet across the roof.
