Water Heater

Is the Water Heater like the Re-fridge..converts to electric once plugged in to shore power

According to the brochure for your coach 2002 Winnebago Sightseer the electric heating element was not an option.

When the electric heating element is present there will be a separate switch to turn it on or off, allowing one to use gas, electric, or both (for faster heating). There is no automatic switchover, however.

So best to keep off when not in use ...

Certainly no need to burn LP to heat the water when you are not using the coach. For sure, don't turn it on if there is no water in the water heater.
