Water Lines in 1999 Winnebago Minnie

Help me, please!
My mother is the proud owner of the lovely RV in question. When she arrived here to visit, her water heater went out. The RV dealer had the part, but could not install it for 4 weeks.
I have engineer husband. Installing it was not a problem. Those pesky little valves on the water lines are!
She has all the original documentation on the bugger, but there is nothing that shows which way all the valves on the water lines need to be turned in order to make everything operational. I have water coming in, but cannot be sure it is reaching the hot water heater. One valve dumps water out from underneath in two places.
There are some notes written in sharpie on the floor, underneath the bed. (Not helping. It's not clear if those are for winter storage or summer operation.)
I've hit the winnebago website, and pulled down the plumbing diagram, which shows nothing more than the parts installed.
Does anyone have something better I can reference? I'm happy to post pictures to this forum, or somewhere else for visual reference.

I could tell you what you need to completely re-pipe it.

A "gotcha" when trying to diagnose and diagram what is there is knowing which component(s) also have a check valve built in to it/them (like the pump should).

If it has a one valve winterizing setup the following diagram I drew may help.
