AquaHot HAS a priority - the other way around from your description. Domestic hot water demand shuts down heat. Seems I recall that Oasis does this as well.
But, you stated the burner was on. Seems what happened to you is that it failed to light causing the domestic hot water to go cool. Even if the priority was reversed (heat trumps domestic) and it was just a little nippy, the heat demand should not have totally killed the domestic hot. Something failed to light.
Just to further clarify, if you stopped after a drive, had the diesel burner OFF and NO shore/genset power (even with with the 110v element switch ON) then you WILL run out of hot water rather pronto. Without the diesel burner on and/or the 110v elements actually powered and on, the engine will 1) need to remain running to heat the hot water being used in the shower and 2) the engine alone will NOT provide sufficient heat to heat a continuous hot water demand like a shower.
Neither Oasis or AquaHot actually heat a bunch of water in a tank like a traditional stix-n-brix hot water tank. Rather, these hydronic systems heat the water on the fly as it is used and therefore must have a heat source (diesel, 110v, or engine) to provide the heat while hot water is demanded.
