The garage door of the Canyon Star Toy Hauler is one BIG and HEAVY door. Such that I do not have the strength to close it by myself.

I've even had a couple of big, burly type guys do it and they admitted it wasn't easy - so I don't feel like such a wimp !

It has been suggested to get some type of winch/pulley installed but when I talked to the Service guys re this they said it cannot be done due to the bunk beds being in the way.

Surely there is some type of solution for this ? Any suggestions ??

I would go to a boat dealer and look at a winch for pulling a boat onto a trailer. They can be either manual or electric.
