Some GE induction units display dashes when the cooktop is locked (someone depressed the Lock button).

Try unplugging it for 30 seconds. It's like a computer it might need to re-boot.

Guess I'm confused. Are we talking about a convection oven, or induction stove top?

When we first took delivery of our coach we had error codes on our induction cook top. We unplugged it, made sure the prongs were turned the correct way, and plugged it back in.
