Quick question. If the coach it Total electric and you have a residential fridge in it do you have to run the generator while driving down the road to keep the fridge on?

NO. There should be an inverter powering the refrig (and other outlets as well.

While you are driving, your batteries are being replenished by the alternator. So the answer to your question is no, you don't have to run your generator while traveling if you are just concerned about your residential fridge. If you choose to use roof (not dash) air conditioning, sure, fire up the generator.

Always have your battery cut off switch on when ever your using the coach and your BIRD or B.I.M. charging system will keep all your batteries maintained.
All above answers are correct also.

Our coach has 8 house batteries (2016 Ventana). Two batteries are dedicated to the refrigerator. At least that's what we were told...
