Sighting safety, the popular Copper Canyon Tour has been permanently derailed by the Mexican government. The safety issue is why you have never seen a similar RV on rail trip in the U.S.
I wish now that I had taken the trip prior as I have heard great reports on it.

You can take your RV to El Fuerte, MX(on the SW side) which has an RV park where you can leave your coach and take the train either for a day trip or staying overnight(s)-Great Trip!! Also a KOA on the NE side where you can drive or train into the Canyon.

I talked to a couple tour operators and they are still running the Cooper tours sans the flatbed railroad part. They now bus you into the canyon and do hotel overnights in the canyon. Apparently, the MX government cited the fact that flatbed RR cars are not rated for passenger use (i.e. your RV strapped on a flatbed while you stay in it) and that was the reason to stop this practice.

Darn, I really wanted to do that tour via rail.
