How about mount one of these guys high up in the grey tank, and wire it to a light or buzzer?

Ramblin,
So far your latest suggestion is the best that I have heard.
I have a concern with making a leak proof connection on the gray water tank with this
Tank Plastic Float Switch Liquid Water Level Sensor.

A bigger problem would be that the alarm would go off every time you took a shower or ran water DOWN the drain, unless the drain is big enough to locate the contacts in top of the pipe. The OP wanted a way to sense water coming back UP. Two contacts in the grey water tank mounted high in the tank would also be set off each time the water sloshed around while traveling. Those contacts could be disabled when traveling, but it's getting awfully complicated when the level monitor already tells you what's going on....if you check!

Should not be difficult to make a leak-proof connection. Use the supplied rubber grommets, and gob on a tube of clear silicone and you're probably good to go. I'd make sure the switch is up to the task though. Might not be suitable for the stuff it comes in contatct with in a typical grey tank (detergents, toothpaste, bleach, etc)

The installation of contacts in my suggestion would be made in a "vertical" section of drain piping or in the top of a horizontal section. I don't believe there is enough back pressure in an open drain line to fill the drain pipe enough to short the contacts; however, before I installed such a thing I would build a mock-up of the same size and run water through it to see if the concept worked only when a full tank backed up.
In my case, I wouldn't be able to get to my grey tank easily enough to install a level gauge.
