I have a 2005 dutch star on a spartan chassy with 305/70/22.5 tires on the front and the ride is great, im running with 275/70/22.5 on the rear, would like to go the same as the front, would they rub?

Seems odd to me that you are running two different sizes. As for your question, check with the tire manufacturer and ask for the diameter and width. This will tell you.

Sounds like to me the MH is over 40ft. Some brands runs a slightly larger tire in the front axle to handle the weight. But I'm just guessing.

I have the 305/70 all around and it's no problem. Put Koni's up front as well which makes for an even better ride.

Possibly, it depends on the offset of the rims now on the rig. On ours we had 7.25" wide rims, the offset and width would not have been enough for 305/70's and we're just fine with the 275/70's on the rear weight wise.
I'm running 275/70's on the rear and 305/70's on the front. All on 8.0" wide rims since I changed over to Alcoa's.
