How do I stop it from shutting off during the 11pm-7am time period? I also need the manual on all the settings.

The quiet time is controlled via the inverter settings.

The manual should be included with all of the Newmar documentation, if not, the manual should be online at the inverter manufacturer's web site.

If the ePlex panel works the same as on a 2007 - I think it is - press the "q time" button on your ePlex control panel and set start of quiet time using up/down arrows, press "q time" again to set end of quiet time and press it again to set current time. Start the auto gen by pressing "I/O" button right next door to the "q time" button.

press and hold "prefs" for a few seconds and then scroll down to set the auto gen low battery voltage - usually around 11.4 volts.
