My '04 coach has the Tuscan maple finish on the cabinets as well. I have bought plenty of maple from Home Depot here in CA. Never had a problem finding it! Austin's Hardwoods in Santa Ana sells good quality maple plywood as well. I built bathroom cabinets in my house out of it. They also stock maple mouldings of various types. I got some 1" bullnose stock when I made my steps.
I took a sample of my cabinet doors and the bare maple to Rockler, and they helped me match the finish. I use General Finishes Maple oil based stain for the color, and then use the General Finishes High Performance Satin Water Based Topcoat.
Technique has a lot to do with it as well. I use 220 grit sandpaper for my finish sand, and wipe the stain on with a cloth. I have a HVLP sprayer from Rockler for the topcoat, but I have brushed it as well. Using courser grit sandpaper will yield a somewhat darker color. (The finish is a little darker than it appears in the picture, pretty close to the cabinets.)
