My Sharp convection/microwave oven has been taking longer than expected to cook in convection mode. Using an oven thermometer I discovered that when set to 350 the oven only reached 275. At 425 it reached 350.
Anyone know if there is a way to re-calibrated the thermostat?

I can't help with this,  however, while on this topic, does anyone have a method for cleaning the oven. The manual says to use an oven cleaning mit. We have been unsuccessful in finding one.

I would call Sharp about recalibrating.
As for cleaning I have used Bar Keepers Friend which I also use to clean the sink. It works well and shines the inside with little effort. You should be able to find it most anywhere. I bought my last can at a Walmart.

Check this Convection Oven Troubleshooting Guide I found online by googling "convection oven troubleshooting." It has a step-wise process for isolating your problem, including links to deeper levels of analysis (which my wife tells me I need  , but I won't mention it here as it might constitute hijacking another person's thread).

Algoma: My Sharp is doing the same. I couldn't find any help in the trouble shooting guide that EngineerMike found. So far we just leave things in longer. It's a truely scientific solution, but until we can recalibrate it don't know what else to do. Marv

Can you find out what the actual temperature is with an oven thermometer and just set the oven at a higher level to give you the temperature you want? For example, if a setting of 350 gives you 275 (75 degrees low), select a temperature of 425 to see if that gives you 350. I know this may be a little cumbersome; but at least your cook time will be accurate, and it might be a good work-around until you can get the oven calibrated.

Like paz... just readjust accordingly. When my wife was learning about ours, she heard on the tv cooking shows and elsewhere on the internet, including in the manuals the convections, whether there the ones for an RV or for the home, the temperature must be set differently because the temperature is lower then a gas or electric oven.

Yes our oven does reach 350 when set to 425 and that is how we use it. Most books I have read say that you reduce the cooking time when using a convection oven, not reduce the temperature. Our cooking time is much longer than a normal oven so I know our oven is not right. What it means is that we cannot use any of the Sharp auto cooking functions as they assume the correct temperature. Not a big deal in the scheme of things I know, just annoying.
