We're looking at installing a Dish Drawer in the cupboard that would normally house the washer/dryer.

Has anyone done this and, and were there any particular problems or issues that need to be addressed?

We had a dishwasher drawer installed in our 2005 fdds while in Yakima at this years rally. It took WRV Service Center all day and then some to put it in the cabinet below our stove top. You would have to have a bit more modification done to install where you want the unit. We were charged $1660.00 for the unit including install. Love the unit.

Met some folks in Mulege, BCS, Mexico over Christmas that had a Fisher-Pagel dish drawer installed under the stove in a 38 foot 04 or 05 three-slide. They were very happy (except when he didn't see the speed bump south of town & hit it @ 30 mph; mighta rearranged some dishes). The FP model is so quiet I can't believe it.
The closet has all the hook ups, so I don't see a problem, though it won't fill the space & you'll need some cabinet work to finish it off.

UPDATE:
The installation was finished today! It works great.
It uses the top 2/3 of the washer/dryer cupbord, and there's room in the bottom for my laundry hamper and dishwashing supplies.

There were a couple of minor hurdles (like replacing the water supply tap to accomodate the fitting on the dishwasher) and the job took my husband and his buddy most of a day (including shopping for parts but the finished product is worth it to me.
