I can't find my manual. Can someone tell me how many quarts of oil a
Onan Quiet Diesel Generator7.5HDKAJ-1045H takes?

Your manual is older, so you will have to either copy someone else's manual, or get it from cummins, I would ask for an owner who has their's to make you a copy and send it to you. You can work out the details with them.
