Running Hot?
Our 34' Alpine with the 400 Cummins started running hot - I think. For the past 8 years it has always run in the 180-190 degree range, even going uphill. Now the motor is running right below 200 degrees on the flat and it climbs to over 200 to 210 degrees going up the same hills (6-8%). It doesn't seem that the fan is engaging. Any thoughts on this or corrections? Tom

The fan could be the issue. What type of fan do you have? Fan belt, hydraulic, or electric?

Alpines use hydraulic-driven fans for their side radiator/CAC.
While it might not be the cause, before going to too much expense, I would install a new thermostat. An inexpensive first step and not a bad idea at that age.

Running Hot?
Tom, while I agree you should look into the change of 10% in operating temperature, our '05 runs 200, +/- 5 degrees and has done so for its entire life, so I would not be too worried about the actual temperature, just the change.
How old is your hydraulic fluid/filters, do you have enough fluid? Last year we had to replace the 2" hose from the hydraulic tank to the pump, what condition is yours in?

Are you having to add coolant? On my 2001 the problem ended up being the charge air cooler. Expensive!$

Have you ever cleaned your radiator fins?

200 to 210 degrees is not hot. My VMSPC gives me a yellow light at 230 and red at about 235. I believe that is when the check engine light comes on. If you are not losing coolant, it is not overheating. If you haven't yet, replace the radiator cap. That pressure is important.

While I agree that 200-210 will not damage the engine, the fact that operating temperatures have gone up suggests that something has changed.
Again, my first step would be to change the thermostat.
