Going up a grade the A/C on dash will cut out with acceleration... then comes back on when you ease up on gas pedal

I know this is a common problem with FORD, what chassis do you have.

Most autos have an AC cut out to give more power when needed to accelerate like passing or going up hills. I would assume that motor homes do also.

I had a 01 Surfside with the same condition. The only fix was to do the Ford TSB or add another larger VAC. can.

Most likely you are losing vacumn under heavy throttle. The next time it happens, have someone feel for airflow at the defrosters. For safety, your air goes to defroster at low vacumn.
you will have to check for a vacumn leak. If there no leaks, you will have to add a vacumn cannister.

The air does not blow cold enough, can this be a vacuum issue too? How do I find the vacuum?

Mine did the same thing. At first I thought there was an A/C cut off during heavy throttle but then I noticed no air out the A/C vents. Found the problem to be the vacuum issue others have mentioned here.
