Does anyone know how to adjust the headlights on a 2005 Sea Breeze LX, with a Workhorse chassis?

Here is a procedure I used on my 99 Tradewinds. I noticed I couldn't get them adjusted up far enough and I had to cut almost 3/4" off the adjustment screws. After cutting them I was able to get full range of adjustments. It seemed they bottomed out on the housing before the light was pointing up enough. Don't know if yours are the same as mine but that's my experience. The Tradewinds is notorious for weak headlights.

Were you asking how the lights are to be aimed (answered above), or how the adjustment is made?
If the latter, and assuming your coach uses the '98-'02 Chevy Tahoe/Suburban/pickup light assembly, the adjustment screws are found on the inside top (up/down) and outside back (left/right) of each assembly behind the lamp units. The adjust screws are at right angles to the long screws you see pointing to the rear, and you need a T-15 torx driver for the job.

Regarding weak lights, I installed a relay that allows all four lamps, both high and low beam, to be on when on high beam. With the high beams only, I could not see the road up close. Dumb idea, Chevrolet!

This is what I'm talking about all lights lit on high beam...

Those are the exact headlights that I have. The original question about adjusting the headlights was covered by Dick in his post, although I was having trouble finding out what tool to use and where the adjusting screws were. Sooo...thank you for the info on which tool I needed to do the job. The adjusting screws where in a place that I couldn't see clearly.
