The Backsplash in our 1999 Tradewinds was done in mirrors. It reminded us of the Austin Powers Airplane.  As they say on HGTV it was dated! 
So we removed the mirrors and installed Ceramic Tiles. Here are before and after pictures, and here is a link to pictures of the complete project step by step.

Check the picture link. My wife did the thinset and laid the tile in the workshop.  It's not much but it may help hold off the wolves.

That looks really nice. I wonder how it will hold up.

The picture link in the OP showes some of the process, here is how we did it.
We installed the tile on 1/4 inch backer board in the workshead and left 12 tiles out. Then moved it all to the MH in sheets. Contractors cement between the wall and backer board with screws into the wall where the 12 tiles were left out. Glue in the missing tiles install some molding I made and grout it up with Polyblend Grout which is suppose to resist cracking. The jury is still out on the cracking but it's in a fairly long 12' but shallow 20" slide and I hope the slide will buffer some of the road vibration. Also being on a air suspension chassis won't hurt our chances for survival.

By doing the tile work in the shop and carrying the 1/4" backer board into the MH we were able to get the tiles very straight and the thin set on evenly. I hope this will help prevent cracking down the road. Also working under the cabinets would really have been awkward, so I think this method was really a lot easier. The mirrors were really scary easy to remove. They were held in with three strips of double sided foam tape.
