As stated above, batteries give off gas as charged. This gas includes some acid and apparently a positive charge. I've noticed this on other batteries I've had and is very apparent in the picture of the corroded batteries. Expand the picture and have a good look at where the corrosion is. The gas leaves through the caps and travels to the nearest grounded metal to cause corrosion. In the case of the picture, it's the steel hold down rods and the ground cable (top left hand corner). This is why getting rid of the steel rods and using some sort of plastic tie down helps.
Also drawing the batteries down to a low level often and recharging them will just naturally result in more off gassing and promote corrosion. Some of this you just have to live with. My plans are to add mineral oil to help.

I've read other post thru the yrs. on this mineral oil thing, but will the water pass thru the oil when topping off and if it can't off gas where does it go?

The water is heavier than the mineral oil and as such sinks below the oil. Oil and water do not mix is another way to put it.
The oil does not stop off gassing, it merely acts like a choke to control it. You will still need to add water. Just not as often.

Put some oil in a glass and add water. Where does the water end up?
