It's a common complaint with Norcold fridges that have a certain level of the black "recall box" installed. It is subject to false trips if it gets damp. If you fight with Norcold hard enough, they will issue an improved level of the box but insist that it be installed by a professional RV tech in a shop they approve.

Flame looks ok to me, but photo not all that clear. If this is a Norcold 1200, it does have a bigger burner than an older 6 or 8 cu ft fridge. It takes more btus to operate.

Revision 'E' is lastest version.

To prove it is faulty an authorized NORCOLD Tech has to test/verify and then order new replacement AND then install....safety recall so Norcold will not just send replacements nor is it a 'stocked' item.
Who/what/when all has to be accounted for.

Not unusual for a 'circuit board' to not function when wet.

Loosen mount...tilt Recall Box 'downward' so open slot is not as exposed to elements. Box is NOT position sensitive....

As for flame..........Norocld 1200 uses a 2200 btu/hr burner

SHOULD be strong 'double flame pattern' and reach just up inside the flue opening.

Example of bad & good flames
Left side bad burner slots......Right side with new burner

He could install an ARP Fridge Defend and bypass the Norcold box altogether. It does a better job and is unaffected by moisture and heat. I would usually recommend leaving the crappy Norcold box in place simply because it is the official recall fix, but since it isn't working right anyway...

I would do a thorough ( if you haven’t already) check to be sure that it is in fact caused by water intrusion and not in fact doing it’s intended job. Is there any ammonia odor present or a yellow substance or the coils ?

OP stated it Rained/windy...box tripped....He RESET it OK

SO fridge works, no leaks, no high temp excursion just wet circuit board

Simple solution....tilt box downward so open slot is no longer exposed

Put a louver over the top of the cover(s) and openings. And put dielectric grease on every electrical connector.
