My 2004 PA has the slide type thermostats and I would like to replace them with digital thermostats.

Has anyone done this and if so what thermostats were used and how much work was required to wire the new units?

If you have a 30A MH with the Shed feature for the two A/Cs you will not be able to directly replace the dual slider thermostat with two digital ones. I guess a 50A MH would not have this issue.
That being said I did do this upgrade in a Travel Trailer, with a single thermostat, I used to have. I just had to add a small toggle switch for the Fan Hi/Low feature. One of the best upgrades I did to the T.T.
