You haven't provided enough information to get much help, Blake.
Which Fleetwood motorhome brand do you have? There are several and typically the tv and satellite wiring will be somewhat different in each.
I'm going to add a shortcut to this in the Fleetwood forum in case somebody there has already done this. But you may need an assist from a place that installs satellites in RVs - obviously the guy you have is clueless about anything other than a standard home install.
If the rig is prewired for satellite, I would expect there to be coax for each tv brought to some central point where the satellite receiver could be connected. You will have to find it. Your RV dealer may be able to help.
As for the HDTV, what brand and model is the dome? HDTV signals arrive at the dome like any other, but may in some cases be coming from different satellites. That can require multiple LNBs on the dish or re-aiming to a different satellite for different stations. Your dish may or may not handle that automatically. Are you getting Dish or Direct TV? They use different satellites.
What a/c switch is in your coach.

I have a Fleetwood Revolution and mine came with a Direct TV receiver. In the front overhead compartment where the DVD or home theater is located there should be a coax cable that connects to the receiver from the satellite dome. The TV should have a coax connected to it and should also be in the front overhead compartment. If the rear TV is wired for satellite the coax will be inside the TV cabinet. You will have to remove the front wooden face from the rear TV cabinet to locate the coax. The satellite dome should be able to pick up Direct TV, Dish Network and Bell, but you may need to program the satellite dish using a laptop if it is a KVH dome. I changed over from the Direct TV that was from the factory to Dish Network and had to reprogram my dome. How to reprogram your satellite dome is in your owners manual. Your dealer's service manager should be able to explain how your system works and install your receivers and program your dome, I would ask since it is a 2008. Hopes this help.

I'll give it a try... Since you are pre-installed with a dome you should have (one or two wires) coming from the dish and are usually laying in one of the upper cabinets beside the tv (overhead above driver/passenger) If two wires one is the main and the second is usually for a second sat rcvr. There should be another cable from this location to your a/v switch box "Sat In" port. That's all there is to it. The output "To TV" port goes to the tv and feeds the sat recvr when the "Sat" button is pushed.
I don't have an exact answer for your question 3-, but typical sat dome dishes are not designed for high definition. I've been doing a little research on this myself, and apparently Motosat is the only manufacturer who makes a High Definition dish for RV top mounted use.

All the major networks are broadcasting some HDTV content and you can receive it on your current dish or dome. However, you need an HD capable receiver to display it.
Some additional HD content may be available on other satellites or on different transponders on the same satellite. Discover HD and ESPN HD are examples of separate broadcasts from th standard (non-HD) offering. And you usually have to subscribe to an extra service to receive them.

I also have a 2008 40x. I ordered it with a dual lnb and hd sat dish. It came with a KVH autotracking dish don't remember the model off hand. The wiring for the satelite came to the small compartment next to 40 inch tv. There should be a home theater unit in this compartment. Behind the home theater unit is a very large number of wires. One of the wires will be labeled RF1. This is your input to your satelite reciever. If you have a dual LNB there will be a second wire labeled RF2. You could use this for a second reciever or a DVR. I had mine prewired for a second receiver in the BR.
Unfortunately Fleetwood did not install everything needed for HD even though I order it and the unit is equiped with 3 HD tv's. I put my receiver for the main tv on top of the home theater unit and then connected it directly to the tv with a hdmi cable run from the back of the receiver to the tv through the same holes used for the other connections to this tv.

Blake,
It looks like you received plenty of good info already on the install. However, you may want to consider hiring someone that knows what he is doing. Not to say this installer is incompetent, just that someone with RV experience would be better for the job. Call your dealer and see if they have a name for you.
Good luck!
