Wanting to know if the charger under the bed should run 24/7 when plug on 50amp

Yes, it's a converter/charger, so it provides 12v power for the RV (refrigerator, water heater, thermostat, etc.) and also charges the batteries. It is most likely a multi-stage charger, it reduces charge rate when batteries are fully charged, but doesn't shut down, it becomes a 'trickle' charger.

Look up the make and model of your converter/charger to find out more about it.

My 2000 Gulfstream Yellowstone converter runs all of the time.

When I bought it, I replaced the original single stage converter with a GoPower 55 amp 4 stage model.

If yours is a single stage, constant volt converter, your batteries will appreciate an upgrade to a multi stage converter.
