We have 1 light that is not controlled by a remote switch, it is above the sink.
First thing I'd do is remove the light fixture and make sure you have 12V to the light itself. If you have power then it's the light. If no power then it's a fuse or switch issue and you can move your search to find source of the power.
On my coach all the wiring is hidden under the false floors of the overhead cabinets. I've removed most of these for one reason or another. All the wiring is done with wire nuts, it is possible that one is loose.
I have eliminated almost all the florescent lights and replaced with LED strips, 3 in each fixture. I then added a 2nd switch to one of the 3 strips. So now I have 3,2,1 strips ON or OFF, this provides a lot of flexibility in lighting and I know that the LED lights use less power then florescent. I have not had 1 strip fail yet and I installed them ~5 years ago.
