Have you ever changed the Aqua Hot fuel filter?
If I remember correctly that if you have a low coolant condition the pump will not run at all

Since no warning lights on the control panel I think you should at least try changing the fuel filter. It is the cheapest thing to try. Do you have a receipt for the 2014 service that shows the filter was changed?
Also, if you change the filter then I would cut open the old filter and see what is inside of it. It could be that you have or had black slime in the fuel and it blocked the filter.

That's interesting. There is only one on the Aqua Hot. They must have changed the two on the motor also. It should not have blocked up in two years but who knows. Is there fuel in the clear bowl below the Aqua Hot filter? Can you see if there is water in the bowl?

My guess if no 110 to heater that high temp safety switch has gone. Happened on mine. Easy to change. Await and see what Roger has to say

From memory, if you take the front cover off the unit it sits on the right side. It does not go into the water jacket so if you take it off it will not leak water. Sometimes you can reset them by pushing a small blunt probe into the middle and push. I don't have my notes with me and I can't remember if it has 110 volts on it or 12 volts so be careful

Dont know how you would get water in your AH filter. The pickup should be at about the 1/4 tank level of your fuel tank.

Hmmm, are you sure the pickup is at a quarter of a tank on a Signature. Seen nothing in the owners manual that it is. I wonder why they put a water separator on the filter.

Nope, not sure. I'm assuming it would run out of fuel about the same time as the genset.
No water separating filter on my AH.
