Okay, I finally had time to investigate my Aqua hot problem.
I pulled the cover off the unit and used my multi-tester to check all the electrical circuits from the thermostats.

There does not seem to be a schematic for my model which has the 3 small cube type relays which the other units don't seem to have.

There is a 12v power source through an in-line fuse which feeds the t-stats and returns through the small cube relays and then to the main circuit panel.

Well, the in-line fuse was blown. Just a 3 amp. I replaced it and then I had the furnace mode back on the thermostat again. Simple, but still not easy to find.

Anyway, thanks to all for the suggestions and help,

FWIW those are Bosch 87/87A type relays, they are a Monaco addition and appear on their electrical schematics. IIRC

That is EXACTLY the drawing that I wished that I had.
I have all the AH manuals that came with the coach but none of the drawings showed the small relays.

At least now I know that this wiring was original to the coach. I'm sure this unit has been worked on over the years before we got it and the wiring to those small relays was sort of messy so I tidied it up a bit and now I have a reference to actually see how it was originally done.
