Dan, you can replace it for your oven. The oven is a bit bigger and does some items a little better. I like the option of having and using both. We use the convection more than the regular oven. HTHs

Dan,
Yes they do put in a combination microwave/convection oven so you can use it for both. Yes they bake in about 1/2 the time as a regular oven. The one in our 07 is really nice with lots of various functions that only my DW knows how to use One other thing though is that if you dry camp you must run gereator to use it though is a good excuse for charging batteries anyway.

It depends.

If you do a lot of boondocking/dry camping, you can't use it unless you fire up a generator large enough to run it. That's the one reason I would never give up my propane oven. In fact, we had asked Excel if they'd eliminate the microwave/convection oven altogether since it's mostly used for storage, but they said "no."

We've used the convection oven only to bake cookies and pizza, and for those, at least, the time to bake is about the same time as in the propane oven. Maybe *some* things take half the time in a convection oven vs the propane oven, but cookies and pizza aren't among them. (And we've since gone back to using the propane oven for pizza because we didn't like the way the crust turned out in the convection oven.)

I agree with Linda that certain foods cook and taste better in a regular oven. That said, we would note be without our microwave/convection oven and use it all the time. I recommend having both installed in your new Excel.
