Was going to go ahead and get fluid and filters. Just head up to Allison and ask for filters for md3060 and seals and everything else needed and then I guess transynd fluid...
About how much if I drain the transmission oil pan and both filters....

From your original pictures you have the deep pan version , that makes a difference in capacity and maybe filters.
Here's the shallow pan version (picture below ) I'll see what I can find on capacity.

Two 5-gallon pails if you do the double drain and refill but wait for the analysis before you do anything. You'll want the high capacity filters. What's the serial number? With that, I can find the sump size.

You have the deep sump. This is the 4" sump so you'll need the long filters which are 6" long. The filters for the 3000/4000 Series are 2" longer than the sump depth because they fit up into the main housing. The high capacity version is P/N 29548988. This is a kit that includes both filters and new orings.
Note: The filters go into the "MAIN" and "LUBE" filter cavities and are exactly alike so you can't mix them up.

So that color looks a little more promising? Just went out and pulled dipstick.. much clearer and with a red tone to color... Going to get the kit today from jg lubricants today and hopefully get it back out to them today as well... Have a trip planned for middle of August...

The color of the fluid on the outside of the transmission is transmission fluid mixed with dirt.'
If the transmission was slipping, you should have noticed the engine flaring and the vehicle not wanting to move. You should also have gotten some trouble codes.
Combine all that with the color of the fluid on the dipstick, I must respectfully disagree that the transmission was slipping and that was the cause of the water temperature issue.
If the engine temp goes up and the transmission doesn't, I would suspect an engine issue. Low coolant, malfunctioning engine fan, etc.

Which is what makes me go hmm... The water temp will maintain and cool as long as the transmission is below 200. Once the transmission gets to 250 then it causes the motor to overheat... Not sure an sending the fluid to be tested got all the stuff from jg lubricants today....

I don't find that surprising at all if there is an engine cooling issue. The engine cooling system should maintain stable temps with the trans at 250.
The transmission cooling test and the engine cooling tests are run at max temps (trans at 250 in the sump) and should stabilize. If the engine is overheating with the trans at 250, the engine cooling system for some reason is not doing its job.
Also, if the engine cooling system is not at its full capacity to cool, the trans temps may rise. Most motorhomes don't run the trans at 250 in the sump.
Oil analysis is a great thing, but I would be looking at the engine cooling system.
If the trans is malfunctioning due to slipping or some other malfunction, it will get over 250 in the sump and over 300 to the cooler, and the oil will be black.
I suppose it's possible trans fluid degradation could contribute, but I've never seen a vehicle with an overheating engine and the cause was transmission fluid.
Sorry to be so wordy but the bottom line is the trans at 250 in the sump shouldn't cause the engine to overheat.

Ok... I could have sworn I eleminated the cooling system with the drain, thermos, seals and hoses last week.... But maybe not...
And the hydrastatic fan does run about 250 rotations per minute at idle and obviously higher at increased idle...
I bought a cooling analysis as well...
