I've seen more than a few of those built out of a 26 foot U-haul truck, although that is nowhere near as much truck as a OTR truck.
I think full on OTR truck drivelines are overkill unless you are moving 80K over the Rockys. THe MDT can be had like mine it does have a single OTR rear axleand air brakes. but it has the smaller 5.9L engine. some of the Ford MDTs have the Ford 6.6L&7.8L Diesel and Cummins 5.9L &8.3L diesels. These can be had quite cheap.
There are plenty of U-haul conversions and others at this page Tow Rigs and Trailers - Pirate4x4.Com : 4x4 and Off-Road Forum

I built a RV out of something that is closer to a OTR truck than the U-Hauls.
my build pics on page 2 are still visable (wish i could edit my other post to fix the missing pics)
My new T/C project (with pics)

here is a truck build that's a lot like mine.

I have thought about a box truck. But like the semi better. I like to tow stuff I'm not sure why but I like it. I'm just not sure what the rules and requirements are to take a class 8 semi amd trailer and turn them into rv
