Typically we see 5 grease fittings on a drive shaft if you have 4 universals.

Joelyn,
You probably won't see any grease coming out the spline/shaft connection. Just a few squeezes will suffice.
You can't fill the hollow shaft up--

I just changed the oil and lubed my rig today. Two or three squirts has always done the trick with the fittings on the drive shaft. And like DriVer just advised, I found five zerk fittings on my drive shaft.
