Correct Cooling Temperature

I apologize if I’m beating this cooling thing to death but I’m really concerned about what is normal and what is abnormal. I need to get it straightened out and cleared up before my up coming vacation which will include a lot of mountain and desert driving.
I took my motor home to a qualified Workhorse Service Center and had them check for leaks, proper fan operation, and engine temperature. They assured me that everything was operating normal.
Could someone please point me to documentation that will explain what is normal and what is abnormal cooling temperatures. I am running at 207 now and I used to run at 204. I see some people say they are running anywhere from 197 to 203 as normal.
Any help will be appreciated,

My chassis guide says, Normal operating temperatures are between 190 to 240 degrees. It goes on to say, Temperatures of 247 degrees and up should be suspected of overheat...
And also, As a general rule for gasoline engine chassis the start of the amber or red area of the temperature gauge is the “overheat” zone, roughly 260 degrees.

The needle on the temperature gauge will begin to move at 225°. This was confirmed using a SGII.
If the needle on the gauge isn't moving you have absolutely nothing to worry about. Normal operating temperature is just that "normal."

My gauge moves all the time and pretty much in lock step with my newly installed Scangauge II.
Does the dash gauge get it's information from the same place as the SGII?

Ron, The ECM issues signals to the temperature gauge and the SGII as well. Everything is run through sensors I believe.
