I've got the F53 chassis under my Pace Arrow and I've wondered the same thing. Edmunds.com shows the F350 chassis from that year having 395 ft/lbs at 2400 rpm , 245 horsepower at 4000 rpm.
The difference I'm curious about is the catalyst issue. Since the motorhome chassis has no catalytic converter and minimal emissions equipment, is the horse and torque significantly better? And then add the intake and exhaust mods and what is your real world power?
FWIW, I found on a recent trip (one of my first with the "new" motorhome) that its best fuel economy towing my Jeep at 22k pounds, was right around 64 miles per hour which equates well with the peak torque output.
