This is exactly why there is some confusion. You need to know the chassis year not the coach year. My 2013 coach is built on a 2012 chassis.
2 Valve's held 6 quarts, 3 Valves's hold 7...but as Tejay stated above, if you are not sure then add 6 and take a dipstick reading. It's easier to add than remove oil.
Ford techs should know all this, I would call the service manager and complain as too much oil can damage an engine. First thing the dealer should have done was read your VIN to look up the correct service information, check ECU codes and check for recalls/TSB's.

Yes, the older 2V V-10s took 6 quarts of oil. The dipsticks were never calibrated properly and would not read right. My 2001 always read between the full and add marks after changing oil where I added the proper 6 quarts as specified in the owners manual.
Never, ever trust what you hear from the dealerships, whether in the service department or especially the salesmen. I suspect your service deptarment looked up the oil capacity for the current chassis. Always trust what the owners manual says, or if you are skeptical, call Ford and ask them. Also, ask them to put it in writing.

Dipsticks in motorhomes are not a new problem. General motors came out with a warning a couple of times about dipsticks being wrong. Their advice was to change the oil add the correct amount of oil and mark the dipstick with a file. If I fill my 1999 V10 to the fill mark it is almost a quart too full. The best thing is to change the oil, fill with the correct amount of oil, Run the engine. Shut it off and let it set for ten minutes. Check the dipstick. If it is showing full, do nothing. If it is low or high, mark the dipstick with a scribe or file. Just for the record, I have had 5 motorhomes. Two of the 5 have been wrong on the dipstick. 1 Ford and 1 P32 Chevy.

My 2006 3 valve v10 takes 6 qts. Been doing it that way for 11 years now.

120 Years of internal combustion engines, and I have yet to see a manufacturer state the oil/filter capacity on the top of the engine.
How simple would that be?

My 2007 motorhome is built on a 2006 chassis with the 3 valve engine. Manual says 6 quarts.
