I think I would go with the tire manufacturers recommendations. Your new Michelin's may be just a slightly different build than when your coach was new and they gave their recommendations.

I would go by the coach weight and the inflation table of the tire manufacturer. Many dealer techs don't know much about different weight of motorhomes and just recommend the highest possible inflation for this given tire.

Concerning Sumo springs, I have the Sumo Maxims installed and did not experience much improvement in the softness of the ride. However, they helped a lot with the leaning and wind gust sensitivity. My unit drives very surefooted down the road. But I also have the CHF applied and a rear track bar installed.
Passing trucks do not bother me anymore.

Down shifting and over-reving

When in the mountains I take mine off cruise and that seems to solve most of the issue.
