I often replace items more as preventative measure rather than repair. When I do this, I usually carry the old part, that's still serviceable, as a spare.
Serpentine belt, tensioner, and idler pullies.
Ignition coils and spark plugs
As you can see, the list is short and focuses on the two problems I've encountered with my V10, chirpy serpentine belt (solved) and misfire (solved).
I do carry a full set of tools and could probably do a major overhaul on the side of the road.
We tow a toad, its nice to have a spare vehicle. I've had to use it twice for a parts run in an emergency while traveling. Once we had the upstream O2 sensor pop out on the right exhaust pipe, and the other we had to replace the starter
We are normally never more than 20 minutes from a Walmart or an auto parts store.

If you need brake fluid or trans/ steering fluid on a trip, there is a good chance that something is leaking and needs immediate attention beyond topping them off.
With coolant, unless you carry a set of hoses, you shouldn't need much of that either.
As far as filters, they are avalable everywhere and shouldn't need to be replaced in an emergency, with the exception of the gas or fuel filters.
There are far too many variables, to carry enough tools and supplies, to cover most breakdowns.
Preventive maintance and some basic understanding of the systems is the most important thing.

Little oil, brake fluid, I carry to much carp anyway LOL understatement. Keep maintaining above "normal" or early and Don't worry. If I were headed to Alaska again I might carry a extra or two.

Fuses. I had a V10 motorhome. There were three different sizes of automotive fuses.

I don't know the age of the coach. I like to replace all hoses at ten years as preemptive action. Radiator, heater, etc.
