I highly recommend getting a ScanGage which provides readouts of many different engine and sometimes transmission functions. The ScanGage is not terribly expensive - less than $150 if I remember correctly - and plugs into the OBD port for both power and data. Installing the display can be as quick and easy as a top-of-the-dash mount, or with some work can be mounted in-dash.

Honestly I think you are pushing the envelope towing you Jeep with trailer and canoe on top, got to be pushing your towing weight limit.
I have the full Banks Power Pack system with 5 Star Tuning and my low estimate is 400 hp and 500 lbs of torque.

My RV has been upgraded in the back with frame reinforcement and heavier hitch and air bags.

My stacker trailer plus Jeep and boat weights 6500 lbs, 4 electric brakes on trailer..

I have no issues in the mountains, just wish my axle ratio was less than 5.38 so my rpms' would be less, I have plenty of power..
