2001 Lexus ES300 towing

We are new to RVing and bought a nice used Coachman Concord 300TS this summer. Now I am figuring out what to tow behind it. We have a nice 2001 Lexus ES300 that the owners manual says is four down towable but limited to 55 mph and start up every 200 miles. The 200 miles is easy but I would think we would need to run 65 on the interstates to not get run over. Are there any of you towing this car or have in the past? Any thoughts on going 65 max instead of 55. How conservative is the manufacture? The Toyota Camry is basically the same car, engine and automatic transmission with no speed restrictions. I looked at Dolly towing but that just looks like a big hassle and lot of work and heavy lifting all around so if the Lexus won’t work we will have to look at other vehicles. Thanks for any input. I've been pulling a 2000 Lexus RX300 front wheel drive for about 10 years now. I run about 55 to 65 at the most and have gone about 400 miles in one day.

I disconnect the car every night and drive it at least a couple miles.
