Why can't you take a short shower? Are you sure your system hasn't mixed cold with hot, perhaps in an outside shower fixture left open? (a common issue) or perhaps a partially open winterizing valve?

Did you call Girard because you've had the issue the OP stated of any water use causing the tankless heater coming on? Why is the RV manufacturer being blamed? Did they install a unit with too little capacity?
Bob & Donna
Our problem with short shower.
We get water hot, shut off water to Lather up, turn water back on, water goes from hot to cold to hot. The time it takes for water to get hot again, time is saved just leaving the water run.

There is no problem with cold water mix. Can shut down cold in completly still have issues.

The Manf. was blamed because of the water manifold.
Heater turns on only when hot water is turned on.
Didn't know there was different capacity's.

We have tried hookups, no regulator, With Reg., & just pump.
Unit tested to 100psi in Manf. we don't come near that with no reg. but we have to shut down Kitchen water Manafold 1/2 or better off to get water hot enuogh to do dishes.
With reg not enough presure to rince off soap in shower.
Pulsating pump & water heater do not play well together.
