Tearing down Entertainment Center on Avenger Primetime

Hello everyone, hoping to get some advice in here. I'm new to Rving and have bought a 2015 Avenger Primetime by Forest River that I am trying to make it my own by tearing out the center Entertainment Kiosk to make it more roomy. I have contacted Forest River with my VIN number and they were super nice and sent me blueprints of my RV and said that the Entertainment Center is NON load bearing. SO before I start to rip this out and build a shelf type system for a larger tv I have a few questions.

1- What am I going to find on the ceiling/floor once I rip it out? Does the tile go all the way? Will the ceiling be discolored from the rest?

2- As you can see by the picture right now it has sliding doors on both sides. I want to put a curtain that will cover the whole bedroom. I have googled 'privacy curtains for RV's' but didn't really see anything. Can someone point me in the right direction on what to buy? Should I use the ceiling for the curtains or would you suggest drilling into the walls with a rod type holder?

Thanks for any help, and hoping somebody has done this before. If not could you send me somewhere to look??
