periods of non-use

The manual says to drain and sanitize if the unit will not be used for long periods.
But they don't say how long. We might have 60 days between RV trips. Is this considered long?

The reason they don't give a time table is because it depends on the quality of water that last passed through the unit as well as the storage conditions during that period. An example, if untreated well water was last used and the storage conditions are hot and humid, the unit may need to be sanitized and regenerated in as little as 2 weeks. If treated city water was last used and stored in a cool dry place 60 days should be no problem. If your unsure and plan to drink the water than it is recommend to sanitize and regenerate.

Also any time the unit is not being used and not connected, cap off or use valves to close off the the input and output sides of the unit. This eliminates the chance for airborne bacteria to enter the unit.
