7000 KW is quite a bit of power, equals about 60 amps of available power. That being said it might be possible to push it to it's limits. The AC units will pull 15-18 amps depending on size. Microwave 15 amps. Misc loads 5 amps and you are getting close.
I have a 7.5KW generator, when I use it I don't think about limiting power consumption. Never had a problem with breaker tripping when drawing high amps.
Every once in a while the breaker on the generator will trip, no rime or reason as to why.

Had the same thing happen to mine. Only tripped 1 breaker on the generator. Found out the coach was wired with one breaker supplying only 1 A/C unit and nothing else . The other breaker supplied the other A/C unit and everything else. The generator is rated at 66 amps @ 120 volts. I just jumpered the 2 legs of the generator together at the transfer switch and no more problems. The transfer switch and other wiring will handle 100 amps @ 120 volts.
The other solution would be to move some breakers from one side of the panel to the other.

Do you have the capability to monitor the amperage draw while the generator is operating? I can do that on our coach. Assume you have 50 amps to work with and monitor the load as you activate the different pieces of equipment. You may have to manage the load by turning off one thing so you can operate something else.

Turn off one and check what works and what doesn't, then turn it off and the other one on and check what works and what doesn't.

I have a 7.5KW and two 15,000 BTU A/C units. I cannot run both A/C's and the microwave without blowing the breaker on the generator.

You could try and turn on breaker off , then check out each outlet , appliance the inverter or converter. Depending on your transfer switch, turning off one breaker may not energize the transfer switch and nothing will work.
I traced the wiring from the panel to the transfer switch then generator.
