Coach door latch issue

I have a 2000 32' Adventurer and am having continual problems with the Coach entry door latch mechanism. It slowly gets out of adjustment too the point that my wife cannot open the door and even I have problems. I then loosen the three screws that hold the latch mechanism's together (outside and inside), adjust the assembly up and re-tighten the screws. This works for a while, then I have to redo it.
What can be done to correct this once and for all? Any help would be appreciated.

I would take it a part a clean/degrease all parts. Then put some silicon on the back side of the latch (to absorb vibrations), then use blue loctite on fasteners.

Might want to mark it's location after adjustment so you don't smear goo everywhere.
