But, we boondock a lot and the gas oven works very well, just as good as our oven in the s&b and we don't have to keep running the generator all the time. Many times the DW will use the gas oven even when we are on shore power. I'll keep mine and wash the dishes by hand.
All of our cooking is either in the microwave/convection or the grill outside. I have to admit that we've never used the oven in any of our RVs. To us, it's kinda like a hot tub in a house. We never use it so it's a waste of space, but it has to be there for when you sell it because someone else may need it.
I would like to remove it and do something with the space. Store the oven, and when we sell it ~10 years from now, reinstall it. Should be a good project when it's starts to warm up.
