Coolant Sensor

Can anyone tell me where the coolant sensor is on my 2004 Damon 8.1L Vortec? Maybe this is my problem with rough engine performance and an erratic temperature gauge. Every time the engine begins to run rough, like it's starving for fuel, the temperature gauge needle jumps as far back as it can go (toward the lower range), then returns to normal after the roughness disappears. This condition then shortly repeats itself again and again. I am afraid to take it out too far down the road for fear the motorhome will quit on me altogether. Before March, I never had this problem on a long 7500 mile trip. Although, the temp gauge did rise into the hot zone occasionally.

After the trip, the only thing I did was to flush out and seal the cooling system with an Irontite product. Maybe this ruined the coolant sensor and is thus throwing the engine electronics all out of whack?

I understand the obvious conclusion is that the fuel filter is dirty, but why is the temperature gauge reacting at the same time - one is electric?? and the filter is fuel related. I've been working with this problem since March and have about run out of options within my scope of mechanics.

Why would you throw a coolant system sealant into a perfectly good working cooling system. It probably screwed up a bunch of stuff.

I had found some leaks already. Besides, flushing your system is recommended for an older vehicle. Thanks for your recommendation.
